Summer is still here and temperatures are blazing! Make sure you hydrate, hydrate, hydrate! June was all about the importance of water. We strongly encourage you continue to drink water throughout the day. Don't forget you can also eat your water (fruits and veggies)! That leads us to our July challenge!

July Eat the Rainbow Challenge

Eat your fruits and vegetables. You have been told since you were a kid to do it. Your mom probably hovered over you at dinner to make sure you ate that one carrot she put on your plate. Maybe as you grew, you were told to eat them because they have lower calories. Or that they don't have fat and won't clog your arteries. You were probably told to eat them so you can grow up strong, but that was the extent of the knowledge shared about them. We are here to tell you that your mom was right! You need to eat your fruits and veggies...and you need to eat a variety of them.

Fiber from fruits and veggies helps move food along the digestive track. We want our food to enter our bodies and breakdown quickly so the nutrients can be absorbed in our bloodstream. If our food sits too long, it will start to ferment in the stomach, small intestines, and colon. This increases the acidity in your body and leads to many health conditions.

Fruits and veggies also contain the vitamins and minerals our bodies need to function. Many of the systems in our body fail to thrive when we are deprived of vitamins and minerals. *FYI, most of us are deficient and could use a boost!

Also, your gut microbiome is composed of MANY types of good bacteria. These good bacteria NEED the fruits and veggies in order to continue living and procreating. In order for a healthy gut flora to exist, we need to be feeding it a variety of 30+ plant sources a week. That may sound overwhelming for some of you. But have no fear! Nature made it easy for us to add variety and keep track of what we need to add to our diets through color. The colors of the rainbow should be included on your plates through the day! Each color may provide our body with different types of support. Here are some color examples:


This month we challenge you to add color to your plates and EAT THE RAINBOW! As an incentive, we will be doing our first prize drawing for a free functional lab, Introductory Food Sensitivity IgG Test, which looks at the top 5 common food sensitivities: Gliadin (gluten), Cow's Milk, Egg White, Almonds, and Chicken. Movement- Gardening

Have you heard of a Hugelkulture raised bed? This is a German gardening technique that translates to "hill culture" because the layers that you build into your garden create a mount like structure. The garden starts with a later of logs, then sticks and branches, then leaves and twigs, followed up with 2 layers of soil. This method can come in clutch during the summer months because the bottom layer helps retain the water for your garden plants to grow. The design of the layer promotes slow decomposition, feeding the plants in your garden for years to come. Building this garden structure is sure to get your body moving!


This goes to show that, you don't need to be at a gym or have fancy workout equipment at home to strengthen your muscles. Gardening in general requires us to put our bodies in different positions that can challenge our muscles. We must squat and bend to tend to the low lying plants We must reach high for the plants that have grown over head.


We use our strength to dig holes, pull weeds, carry watering cans, and pick the fruits of our labor. Gardening not only nourishes our bodies through the food you grow, but nourishes our bodies through the actions you take to make that food grow!

Recipe of the Month

Featured Ingredient: Peaches

The smell of peaches fills grocery store produce sections during the summer months. Stephanie has fond memories of peach picking in Fredricksburg, TX in the summer with her cousins. It was always hot, but they did reap the rewards with boxes of fresh-off-the-tree peaches! Morgan had actually never eaten a whole peach until she lived in Dallas and the backyard where she lived had a couple of peach trees! She had only ever eaten peaches out of the can gasp!. After that first peach off one of her trees, she was hooked! These memories are what brought us to having peaches as our featured ingredient this month.


As you eat the rainbow during the month of July, bring in some peaches to fill the color orange on your plate! The red/orange pigment comes from beta carotene. The body uses beta carotene to form vitamin A. Vitamin A is essential for many body systems including the eyes. Peaches have both soluble and insoluble fiber, which mean they improve digestion, promote a healthy gut flora, help stabilize blood sugar, and may reduce cholesterol, thus improving blood pressure.


So follow your nose! Grab them while they are in season. Eat them immediately or freeze them for later use.


Peach Salsa

Ingredients: 1 lb fresh peaches diced, 2 Roma tomatoes diced, 2 tomatillos diced, 1/2 red onion diced, 1 jalepeno (seeds removed) minced, 1/4 cup cilantro chopped, juice of 1 lime, salt and pepper to taste

Directions:

  1. Combine all ingredients in mixing bowl.

  2. Give it a good stir

  3. Cover and place in fridge for 15 minutes before serving. This will allow the flavors to blend together.

  4. Serve with tortilla chips or as a topping on your favorite tacos.

  5. Enjoy!

Research and Reviews

Berkey Water Filter Update:

This is an example of government over reach. Berkey water filters have been used in homes for over 20 years. They are considered safe and actually help people get cleaner, safer water at home. Stephanie uses one for her drinking water at home. Unfortunately, Berkey filters were categorized by the EPA as being a pesticide product and they have been unable to sell their filters to the public. The pesticide label comes because it does, in fact kill, the pathogenic organisms in the water. Berkey has filed a lawsuit against the EPA because:

"The fact is that silver is used industry-wide in water filters to protect the filter from biological grow through, which makes them a treated article exempt from pesticide registration. Our contention is that the EPA has selectively and solely targeted Berkey and unjustly reclassified Black Berkey filters as pesticides and placed an immediate Stop-Sale order on our supply chain, while not following proper protocols as required by law."
